Cauliflower & Nectarine Salad
Serves 2
Ingredients:
1/2 Head of cauliflower
3/4 Cup vegenaise (vegan mayonnaise)
3x Nectarines
2x Handfuls Fresh Mint
1x Red Onion
1/2 Cup pistachios
Fresh Lemon
Dressing:
Generous drizzle Balsamic Vinegar
Generous pour of Apple Cider Vinegar
Salt and Pepper
1/4 Cup Olive oil
1x Fresh Lemon
Side salad:
Dark leafy greens (eh baby spinach)
Carrot
Method:
1. Chop Cauliflower finely (feel free to chop/use stalks for added crunch!) and place in large salad bowl. Chop red onion and slice or dice nectarines into bite sized pieces.
2. Add red onion, vegenaise, mint and nectarines
3. Add balsamic vinegar, apple cider vinegar, olive oil and salt and pepper to taste. Chop and squeeze in half of the lemon. Toss to combine.
4. Sprinkle on pistachios. Slice other half of fresh lemon and use for serving aesthetic.
