Potato & Chickpea Korma Curry

Serves 5-6

Ingredients: 
4 Tbsp Crushed Garlic 
1 Whole onion
1 Extra Large Zucchini (or 2-3 regular zucchinis)
6 Large Baked Potatoes
5 Cups cooked rice
2 Avocados
4 tomatoes
3 Fresh Lemons
4 Tbsp Mild Korma Curry Powder
3 Tbsp Turmeric Powder
1 Tbsp Ground cumin seeds
1 Tbsp Smoked Paprika Powder
1 Tin chickpeas
1 Tin Coconut Cream (full fat)
4 Tbsp Coconut Oil
3 Handfuls of fresh parsley
Salt & Pepper

Method:
1. Chop up onion, and zucchini/s.
2. Heat a frying pan on medium heat, add coconut oil, onion, zucchini and crushed garlic. Cook until softened. 
3. Add in chickpeas, rice, potato, coconut cream, curry powder, turmeric, ground cumin seeds, smoked paprika and the juice of 2 lemons. 
4. Stir to combine and allow to simmer for 5-10 mins.
5. Chop tomatoes, avocado and fresh herbs.
6. Serve curry, top with chopped tomato, parsley and avocado, salt & pepper to taste.
