Vegan Pasta Stir-Fry
Serves 2:
Ingredients:
- 2 cups Gluten free pasta of choice (Rice, quinoa etc)
- 4 cups water
- 1x red onion
- 8x cherry tomatoes
- 4x handfuls baby spinach
- 2 cloves garlic
- 1x handful fresh parsley
- 1x Tofu Sausage (or meat alternative)
- 4x Tbsp Vegan Pesto
- Olive Oil
- Salt
Method:
1. Bring water to boil in saucepan
2. Add pasta and cook until al denté. Remove from stove and drain excess water.
3. Chop tomatoes, parsley, red onion, garlic cloves and sausage in to small pieces.
4. Drizzle olive oil in a wok, bring to high heat. Add pasta, and chopped onion, parsley, garlic, tomatoes, sausage and pesto.
5. Cook until combined and ingredients "soften" merging flavours.
6. Add baby spinach and cook until wilted and mix well.
7. Serve and enjoy!!
