Italian Style Pesto Pasta
Serves 4
Ingredients:
1x Bag brown rice pasta
4x Handfuls baby spinach
1x Avocado
20x Pitted Kalmata Olives
16x Cherry Tomatoes
1x Jar Rozas Gourmet Thai Style Vegan Pesto Sauce
4x Tbsp Hemp Seeds
Olive Oil
Salt & Pepper
Method:
1. Fill a large saucepan with water and bring to the boil.
2. Add a small amount of olive oil and a small amount of salt to water.
3. Add pasta to water, Reduce heat and cook until al dente.
4. Whilst pasta is cooking, chop tomatoes in quarters and olives in halves.
5. When pasta is cooked, remove from heat and drain excess water in a colander.
6. Add pesto sauce and generous drizzle of olive oil to pasta. Mix until combined.
7. For serving, add a large handful of baby spinach to each plate. Top with pasta mix. And top pasta with chopped olives and cherry tomatoes.
8. Slice an avocado and serve on top.
9. Sprinkle on hemp seeds & add salt and pepper to taste.
