Last week, I attended a week long women-only holistic health retreat in Bali. It was incredible to say the least!
The food though, was mind blowing!!
Being a health retreat, there is no alcohol and there is a big focus on holistic approach to wellbeing and vitality. All of our meals were prepared on the premises by the chefs, made with love and served with the utmost care. All meals were full of fresh, whole-food, nutrient rich ingredients. But this doesn't mean we ate lettuce every meal. No, in fact, it meant the opposite! We were consuming wholesome, vibrant, and nourishing foods. An array of colours, nutrients, vitamins and minerals, to cleanse us from the inside out. Energising, delicious goodness! Whoever said "you are what you eat" truly knew what was up!
And of course, they easily catered for any allergies, intolerances and vegan/vegetarian diets. YAY! Breakfast, lunch, dinner, dessert, snacks, copious amounts of fresh fruit always available, and we even had a few extra raw treats after we learned how to make them ourselves (NB the retreat has some excellent cooking classes)
Here are just a few of the meals/snacks we ate:
Protein Stir Fry - Quinoa, Tofu, Broccoli, and Steamed Greens (I drizzled with a creamy coconut/peanut sauce for extra flavour!)
Gluten Free / vegan Savoury slices with a Parsley Pesto
Summer Salad - Chopped Pineapple, Strawberries and Sunflower Seeds on a Bed of greens topped with fresh herbs and a Fresh Zesty Dressing
Vegan Nachos - Corn chips, Vegetable and Bean mince, topped with chopped tomato, cabbage, avocado, coconut yoghurt and chopped parsley
Seaside Salad - Strawberries, Greens, walnuts, mango and bean sprouts in a light and tangy dressing
Fried Tofu, vegetable and tempeh stir fried rice, and leftover seaside salad
Gluten Free, Flourless and Vegan Chocolate Brownie
Sesame coated tempeh, corn on the cob, beans, cucumber. cauliflower, cabbage with a peanut and tamari dip and a red-rice salad on the side.
Wellness smoothies and snacks - sesame coated protein bliss balls, fresh fruit and papaya, chia, mango and banana smoothies!
Gluten Free and Vegan Lasagne - Beetroot, potato, spinach, tofu, bean sprouts and nutritional yeast
Epic Breakfasts: Fresh Fruit, peppermint tea, fresh mint water, gluten free coconut granola with a green avocado/banana/spinach smoothie.
Cabbage, Glass Rice Noodles, Tofu, carrot, Sesame Seeds, Shredded Shallots, in Tamari Sauce
These meals and snacks were all so tasty, delicious and healthy AND are so easy to try make for yourself! I will definitely be attempting to recreate a couple of these goodies for myself! Why don't you try one too!
